  • 1 lb 44 Farms Angus Ground Beef
  • 3 oz Bacon (cut into 1/4-inch slices)
  • 1/2 c Crispy Onion Rings
  • 1 Avocado (1/4-inch thick slices)
  • 4 slices Jalapeño Pepper Jack Cheese
  • 1/4 c Lime Chipotle Mayo
  • 1/2 c Caramelized Onions (medium diced)
  • 6 oz Burnt Ends of Smoked Brisket (diced)
  • 12 oz BBQ Sauce
  • 6 Texas Toast Slices
  • 1/3 c Mayonnaise
  • 1 tsp Lime Juice
  • 1 Tbs Chipotle in Adobo (puréed)
  • 1/4 tsp Kosher Salt
  • 1 Tbs Cilantro (finely chopped)
  • Mix all ingredients together
  • 1 c Sweet Onion (sliced thin on a mandoline or knife)
  • 1 c Buttermilk
  • 1 c All-Purpose Flour
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/8 tsp Black Pepper
  • 1 qt Canola Oil

    "COWBOY BURGER"

    To build the perfect burger: Place 1 Tbs. lime chipotle mayo on one piece of Texas toast followed by avocado, burger patty with cheese, BBQ Brisket, crispy onions, and top Texas toast.

    Grill or sear to desired temperature and top with cheese.

    While burger patties are cooking, lightly oil a saucepan over medium-high heat and toast the Texas Toast on both sides.

    Toss the caramelized onions, brisket and BBQ sauce together and heat through.

    To build the perfect burger: Place 1 Tbs. lime chipotle mayo on one piece of Texas toast followed by avocado, burger patty with cheese, BBQ Brisket, crispy onions, and top Texas toast.

    "CRISPY ONION RINGS"

    Place sliced onions and buttermilk in a bowl and let sit for 30 minutes.

    Heat oil in large cast iron pot to 350º over a medium stove. Once temperature reaches 300º turn down to medium-low until ready to use.

    Mix flour, salt and spices together in a large bowl. Remove onions from buttermilk and toss in flour mixture.

    Shake off excess flour and fry in hot oil in three batches. (You may need to turn up the heat to medium after placing the onions in the oil.)

    Fry for 2-3 minutes until golden brown. Remove with a slotted spoon and place on a paper towel lined plate to cool.

    Chef's Tip

    When frying in a pot on the stovetop, make sure oil is no higher than 1/3 full in the pot. If higher it may overflow when you add in your ingredients.
